8-10 Digestive Biscuits

50g of Butter

Filling

125g Caster Sugar

200g of Cream Cheese

2-4dl (half a cup) of Lemon Juice (to taste)

4dl of Gelatin (1 satchel) / 3 tbsb if using powder

Small tin of Evaporated Milk

Method

Base

Crush biscuits in a bag with a rolling pin.

Melt butter and mix in biscuit crums

Flatten biscuit/butter mix into the base of an tart dish

 

Filling

Whip evaporated milk in a glass bowl until it doubles in size

Add Cream Cheese and Sugar

Add Lemon juice to taste

Dissolve Gelatin and add into the mix

Leave to set for ??
