Ingredients

1½ cups / 350 ml lukewarm water (100ml boiling, 250ml cold)

2 tbsp / 30 g brown sugar

3 tsp / 15 g fresh yeast (1/2 of a 25g block)

20 oz / 550 g flour (half strong white, half wholemeal)

1 tbsp / 15 g dried skimmed milk powder (optional)

3 tsp / 15 g rock or sea salt

3 tbsp / 45 ml virgin olive oil

 

Proofing the Fresh Yeast

Pour warm water into a small mixing bowl and crumble the yeast into it.

Add the sugar and whisk lightly until the yeast and sugar are completely dissolved and the mixture turns milky. It should have a pleasant yeasty smell.

 

Making the Bread

Pour liquid into bread machine pan

Stir milk powder into flour, if using, and add to baking pan.

Drizzle olive oil over flour in pan.

Carefully sprinkle salt over the top of everything, making sure it does not come into contact with the liquid containing the yeast.

Set bread machine to medium brown with a weight of 750g or thereabouts and choose a normal loaf setting that has a baking time of approximately 3hrs 20 mins.

 

A topping of cheese and onion or halved black olives can be added when the one hour kneading cycle finishes. (Consult the manufacturer's instructions on how to stop the bread machine
