Boil chips with salt and 1-2 tbsp of apple vinegar

Dry until cooled off and then put in freeze for 60 minutes

Fry the potatoes in oil at 130°C until they are a bit puffy and slightly colored. It takes from 5 to 10 minutes

Drip oil off and let them cool and then put in freeze again for 60 minutes

At this point if you want to save them for another day you can keep them in the fridge for 3 days, or you can place them in a zip lock bag and freeze them and they are good for 3 months.

Fry the potaoes at 190°C until they are golden and super crunchy. It can take up to about 4-10 minutes
