Simple Syrup:
(Yield: about 1 1/2 cups)
1 cup sugar
1 cup water

Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively,

heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.


Lime-salt-sugar:
Zest of one lime
2 tablespoons kosher salt
2 tablespoons sugar

Blend together lime, salt and sugar in a small blender or mini food chopper.

 

Basil Syrup
1/2 cup water
1/2 sugar
1 cup basil leaves, roughly chopped, plus a few small sprigs to finish
Combine the water and sugar in a small saucepan over moderate heat. Stir until the sugar dissolves. When the syrup begins to boil remove it from the heat and stir in the basil
leaves. Cover and allow the syrup to steep for at least an hour. When you’re ready to make your cocktails, strain the syrup and discard the leaves.
